Mama’s Mash with Miss Pow

When a good friend makes us a warm meal from their childhood, we are not only filled with delight and gratitude, but also a sense of comfort as it is oftentimes just what we need. I felt this was a suitable post to share as I am sure many close friends and neighbors in Newtown are joining together in an effort to provide families with home-cooked meals. Their humble efforts are appreciated by those of us that are too far away to do the same. A few weekend’s ago I went over to my friend, Pow’s place and she made her Mama’s Mash, a dish her mother used to make for her when she was at home. It was delicious, satisfying, and, most of all, so easy to make for any occasion. She cut up carrots, butternut squash, and potatoes and boiled them together until they were soft enough to mash. She then drained them, transferred them to a mixing bowl, and added flax milk, almond cheddar cheese, vegan butter, and salt and pepper to taste. She also warmed up a side of brown rice to mix in to make it even more fulfilling. You can get creative by adding any spices and herbs you like. It truly was the ultimate gluten free, dairy free, comfort food for a cold Saturday night in with a good friend. mamas mashmamas mashmamas mashmamas mashmamas mashmamas mash

    So I have to admit, my mother, the glorious Olga Irene Esperanza Lopez-Caceres, made this with real butter and milk. The ratio of potatoes, squash and carrots can be tweaked to your taste. Thanks Jenna for sharing this, you are too sweet. xxoo.. Miss Pow
